If I type in search: Sol; there should be a response from the UI. Maybe our sun from Earth I would suggest.

If you type 'Sun' in the search you can select the option [Star] Sun, however we currently do not have any observations of the Sun in ESASky. 

If in the future we link up with heliophysics missions (for example) that do observe the sun, then observations shall appear.
